Homemade Horseshoe
Horseshoe – Mmm mmm good!

I enjoy making this signature dish that was invented in my hometown, Springfield Illinois. It’s a beef patty on Texas toast smothered in cheese sauce and and then covered with French fries. Here’s the recipe I start from for the Welsh rarebit cheese sauce. It’s the key to what makes this dish so darn tasty.

2 tablespoons salted butter
1/2 cup beer
2 egg yolks
3 cups grated Old English or other sharp white cheddar
1 teaspoon worcestershire sauce
1/4 teaspoon dry mustard
salt

My daughter like them.
My daughter likes the horseshoe sandwich.

Little WigglerDaughter’s Tooth

Is it 12:00PM yet? My daughter just lost another wiggler. Last week, I knew when the one next to it came out, it wouldn’t be long before this little wiggler was running free. Honey barbecue chicken wings for lunch did the trick. Baby teeth are so tiny.

Tonight, the Tooth Fairy is coming.

Interviewing Suit Look Ma… my suits fit again.

I made a deal that I would lose a lot of weight if someone did something. We shook hands on it. So far, I’m the only one honoring my end of the deal.

Don’t let my status affect our deal. With your help, I’m going to make it to that 80 mark.

I am a man of my word. I’ve already lost over 30 pounds. I’m also throwing in quitting smoking as a I’ll see you and raise you…

I keep the promises I make.

Grilled Veggies

Grilled veggies are tasty.

I grilled up an Atkins approved feast for Mothers day. After about 25 years of practice, I’m getting pretty good with fire.

A gas grill makes it a lot easier to cook, but I still prefer charcoal in a classic Weber. Mine is over 10 years old and still cooking strong.

Now if they could just invent low carb wine, the meal would have been perfect.

A friend and I are headed to ZED451 for a bountiful feast. The chefs continually deliver items right to your table for an unending gourmet dining extravaganza.

I plan to prepare for the feast by following my “Stop putting the fork in your mouth” diet plan and not eat all day until I get there.

All of this dining pleasure and I’ll still be Akins losing weight.

Lent is a good time to fast.

I stopped by for some curds today at lunch in Milton, WI. By request, I picked up a big order to bring back to the boys in Chi-town. 10 bags of curds and some 7 year old cheddar. Stop by the moo-shop if you’re in the area for some great deals.
